- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 1/2 cup plant-based milk (such as almond or oat milk)
- 2 tablespoons ground flaxseed or 2 eggs
- Dried Vegetable Mix
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or oil for greasing
- Preheat your waffle iron according to the manufacturer's instructions.
- Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated zucchini, all-purpose flour, plant-based milk, ground flaxseed or eggs, Dried Vegetable Mix, baking powder, salt, and black pepper. Stir well until all the ingredients are fully combined.
- Lightly grease the preheated waffle iron with cooking spray or oil.
- Spoon the zucchini batter onto the hot waffle iron, spreading it evenly. Close the lid and cook until golden brown and crisp.
- Repeat the process until all the batter is used.
