Ingredients:
- 2 cups black beans (cooked or canned, drained)
- 2 cups chopped tomatoes (fresh or canned)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Khmeli-Suneli spice mix (optional)
- 1 tablespoon PureKtchn spices (to taste)
- 2 tablespoons olive oil (for frying)
- 1/2 cup crushed walnuts
- Fresh cilantro, roughly chopped for garnish
- Salt & pepper, to taste
Instructions:

Sauté the Onion & Garlic
Heat olive oil in a large pan over medium heat. Add the onion and garlic, cooking until soft and golden, about 5-7 minutes. -
Add the Tomatoes
Stir in the chopped tomatoes and cook until they break down and form a thick sauce, about 10 minutes. (Canned tomatoes work perfectly here too!) -
Incorporate the Beans & Spices
Add black beans, Khmeli-Suneli (if using), and spices from PureKtchn. Mix everything well, reduce the heat, and let it simmer for 10-15 minutes. Adjust salt, pepper, and spices to taste. -
Finish with Walnuts
Stir in the crushed walnuts and cook for another 2 minutes to blend the flavors. Taste and adjust the seasoning as needed. -
Garnish and Serve
Turn off the heat, sprinkle fresh cilantro over the top, and serve warm or at room temperature.
