Lobio is a beloved Georgian bean dish, typically made with kidney beans, but this version features black beans for a delicious twist. With rich tomatoes, fragrant spices, and a hint of fresh herbs, this quick and easy recipe is perfect for a cozy meal.

Ingredients:

  • 2 cups black beans (cooked or canned, drained)
  • 2 cups chopped tomatoes (fresh or canned)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Khmeli-Suneli spice mix (optional)
  • 1 tablespoon PureKtchn spices (to taste)
  • 2 tablespoons olive oil (for frying)
  • 1/2 cup crushed walnuts
  • Fresh cilantro, roughly chopped for garnish
  • Salt & pepper, to taste

Instructions:

  1. Sauté the Onion & Garlic
    Heat olive oil in a large pan over medium heat. Add the onion and garlic, cooking until soft and golden, about 5-7 minutes.

  2. Add the Tomatoes
    Stir in the chopped tomatoes and cook until they break down and form a thick sauce, about 10 minutes. (Canned tomatoes work perfectly here too!)

  3. Incorporate the Beans & Spices
    Add black beans, Khmeli-Suneli (if using), and spices from PureKtchn. Mix everything well, reduce the heat, and let it simmer for 10-15 minutes. Adjust salt, pepper, and spices to taste.

  4. Finish with Walnuts
    Stir in the crushed walnuts and cook for another 2 minutes to blend the flavors. Taste and adjust the seasoning as needed.

  5. Garnish and Serve
    Turn off the heat, sprinkle fresh cilantro over the top, and serve warm or at room temperature.
